Red Prawns

The diamond of Sicilian delicacies, the Mazara Red Prawn (Aristaeomorpha foliacea) is mainly fished in the Mediterranian waters, south of Mazara, around Lampedusa and Malta, south of Pantelleria or futher east. Some pecularities are the intense red color, the white and compact meat and the unique flavour. With the freezing techinques on board, developed by the Mazara fishing boats, which brought it to the most exclusive markets all over the world.
